The Ranger’s Catch
Steamed white fish with lemon and herbs
Serves 1 · 15 minutes
INGREDIENTS
• 200g fresh cod, haddock, or pollock fillet. Frozen white fish will need to be defrosted first.
• Juice of half a lemon
• 1 tsp dried mixed herbs or fresh parsley
• Salt and black pepper
• 100g green beans or broccoli
METHOD
1. Fill a saucepan with 5cm of water and bring to a simmer.
2. Place the fish in a steamer basket over the water. If you don’t have one, place on a plate over the pan.
3. Season the fish with salt, pepper, and dried herbs.
4. Cover and steam for 8-10 minutes until the fish flakes easily with a fork.
5. While the fish steams, cook the green beans or broccoli in boiling water for 3-4 minutes until tender.
6. Squeeze lemon juice over the fish and serve alongside the vegetables.
Note: Any white fish works here. Pollock is the most affordable.
