Grilled turkey strips with roasted peppers

Serves 1 · 20 minutes

Can be eaten hot or cold

INGREDIENTS

• 200g turkey breast, sliced into strips

• 1 red pepper, sliced

• 1 yellow pepper, sliced

• 1 tsp smoked paprika

• 1/2 tsp cumin

• Salt and black pepper

• Low-cal cooking spray

METHOD

1. Preheat the grill to high.

2. Spray a baking tray with low-cal cooking spray.

3. Toss the pepper slices in paprika, a pinch of salt, and arrange on the tray.

4. Grill the peppers for 5 minutes until they begin to char at the edges.

5. Meanwhile, season the turkey strips with cumin, paprika, salt, and pepper.

6. Add the turkey to the tray alongside the peppers and grill for 6-8 minutes, turning once, until cooked through with no pink remaining.

7. Serve together straight from the tray.

Note: Turkey breast is one of the leanest proteins available. Check packaging — avoid anything marinated or basted as these often contain added fats and sugars.
