The Warlord’s Bowl
Beef mince with rice and roasted vegetables
Serves 1 · 30 minutes
INGREDIENTS
• 150g lean beef mince (5% fat)
• 75g long grain rice
• 1 courgette, diced
• 1 red onion, diced
• 2 cloves garlic, minced
• 1 tbsp soy sauce
• 1 tsp olive oil
• Salt and black pepper
METHOD
1. Cook the rice according to packet instructions.
2. Heat the olive oil in a large frying pan over high heat.
3. Add the onion and garlic and cook for 2 minutes until softened.
4. Add the beef mince and break it up with a spoon. Cook for 6-8 minutes until browned.
5. Add the courgette and cook for a further 3 minutes.
6. Add the soy sauce, season with salt and pepper, and stir everything together.
7. Serve the mince over the cooked rice.
Note: Batch this for two meals. Stores in the fridge for 3 days. Add chilli flakes if you want heat.
